The reason is in the acoustic properties of the shape – a U-shaped fork produces a much purer tone than other shaped resonators. Secondarily, when struck, the fundamental frequency of vibration has the two sides of the fork move alternately towards and away from each other. This motion cancels out in the lateral direction from the fork which means holding onto the handle doesn’t cause its energy to be transmitted to your hand (which would quickly dampen the vibrations).
However, there is still a small axial motion caused by the flexing of the forks, which has the useful property of allowing you to place the fork on a table or lid of a piano and efficiently amplify the sound using that surface. This is why the sound from the tuning fork can easily be heard once its base is held against the guitar, or the piano. Other than the shape of a tuning fork, temperature is also another variable to take in count when experiencing slight changes in the tone of tuning forks.
